Also known as dino or Tuscan kale, with long, dark blue-green leaves and a sweeter, more delicate flavor than curly kale. Thinly sliced it makes an excellent raw salad, and it holds its texture well in soups, pastas, and quick sautes. Fold it into white-bean dishes or ribbon it over pizza.
